Since 2006, I Sapori di Corbara has been dedicated to showcasing the unique qualities of the Corbarino tomato, a variety grown exclusively in the volcanic soils between Corbara and the Lattari Mountains, behind the Amalfi Coast. Cultivated without artificial irrigation and harvested only two months a year, these tomatoes develop intense flavor thanks to the mineral-rich terrain, sea breeze, and abundant sun.
From seed selection to hand-harvesting and traditional preservation, every stage is closely monitored to maintain the tomato’s natural sweetness, acidity, and nutritional richness. Only the best fruits are selected—evaluated by shape, ripeness, and sugar content—then preserved at low temperatures to retain their organoleptic properties, including lycopene, beta-carotene, and pectin.
