Technique and Artisanal Craftsmanship

The Andreassi family uses a fully artisanal process perfected over five generations. Olives of the Leccino, Gentile, Frantoio, and Moraiolo varieties are carefully hand-harvested, gently washed, and stone-milled. Extraction is performed using the Sinolea® method, a natural cold-dripping technique that does not use heat or added water—preserving the oil’s full integrity, flavor, and nutritional value. The oil is immediately packaged to maintain maximum freshness.

Oleificio Andreassi has been producing extra virgin olive oil since 1878, led today by Matteo Andreassi, a second-generation master oil maker (“mastro oleario”) and guardian of the family legacy. Alongside him, daughters Maria Rita and Mariangela Andreassi are actively involved in every stage of the artisanal process. The family’s philosophy is rooted in transparency, craftsmanship, and deep respect for nature. They also create infused oils (with chili, garlic, basil, truffle, and more) and collaborate with pharmaceutical partners to make olive oil-based skincare products such as soaps, creams, and lip balms.
