    Cantiano Sour Cherries are made with Amarene di Cantiano, locally known as visciole — small, dark red Morello cherries traditionally associated with the municipality of Cantiano in the Marche region of Italy.

    These distinctive cherries grow on smaller trees than conventional sweet cherries and develop a deep crimson-to-near-black color. Naturally very acidic when fresh, they acquire a rich and complex character through traditional processing.

    MorelloAustera has been producing Amarena di Cantiano in the Cantianese territory since 2005, preserving the character of this local fruit and bringing it to gelaterias, pastry makers and food professionals.

    The Amarena di Cantiano is also included in the Slow Food Ark of Taste, an international catalogue dedicated to unique traditional products that belong to the cultural, historical and gastronomic heritage of communities around the world.

    The Visciola di Cantiano is officially listed among the Traditional Agri-food Products (Prodotti Agroalimentari Tradizionali – PAT) of the Marche Region, as published in the Official Gazette.

    TECHNIQUE AND ARTISANAL CRAFTSMANSHIP

    The preparation follows a traditional and carefully controlled process designed to preserve the integrity of the whole fruit.

    The cherries are first carefully pitted and left to drain overnight. Their natural juice is then combined with sugar and reduced to create a thick, concentrated syrup.

    Once the syrup has cooled, the whole pitted cherries are combined with a carefully selected blend of spices and gently brought to a simmer. The preparation is then jarred while still hot and undergoes a short pasteurization process.

    The jars are stored in a cool environment for approximately two months, allowing the cherries to slowly macerate in the syrup and develop their characteristic depth, aroma and balance before distribution.

    Cantiano Sour Cherries offer an intense and authentic fruit character, balancing the natural acidity of Morello cherries with the sweetness of the syrup.

    The cherries have a deep crimson-to-near-black color and a rich flavor reminiscent of baked cherries, complemented by subtle notes of cinnamon, clove and lemon.

    The fruit remains juicy and whole, surrounded by a dense, aromatic syrup that provides a rich texture and concentrated flavor.

    The result is a traditional preserve with a distinctive sweet-and-sour profile, where the intensity of the fruit remains at the center.

    CULINARY USE

    Cantiano Sour Cherries are exceptionally versatile and can be enjoyed both as a topping and as an ingredient.

    They are ideal for enriching gelato, ice cream, panna cotta, cheesecake and other desserts, adding both fruit intensity and texture. The cherries and syrup can also be swirled into yogurt and served with granola, or incorporated into cakes and other baked preparations.

    They can be used in fruit salads, pastry recipes and creative culinary preparations, while the aromatic syrup can provide an additional layer of flavor to desserts and cocktails.
