Chillea is produced entirely from biodynamic Sangiovese grapes grown in San Clemente, on the hills of Valconca in southern Romagna, a few kilometers from the Adriatic Sea. This Mediterranean microclimate—tempered by mountain protection and sea breezes—fosters slow and balanced ripening, creating the ideal conditions for expressive and refined wines. The vineyard is planted on marine-sedimentary soils with a clay-limestone structure, particularly rich in potassium and magnesium. Tenuta Mara, founded in the early 2000s, is a visionary estate fully devoted to biodynamic viticulture, where art, nature, and agriculture co-exist in harmony.

TECHNIQUE AND ARTISANAL CRAFTSMANSHIP
Harvested manually in 12 kg crates during the second half of September, the grapes are not destemmed: the whole bunches, with stems intact, are manually selected on sorting tables and gently dropped by gravity into underground terracotta amphorae. These are sealed once filled, initiating a slow, spontaneous fermentation with indigenous yeasts that extends through most of the autumn. The wine remains in contact with its stems, skins, and fine lees for about 10 months of amphora aging, then rests for an additional 18 months in bottle. No additives, no temperature control, no filtration—just the pure expression of grape, earth, and time.

ORGANOLEPTIC AND NUTRITIONAL CHARACTERISTICS
Chillea shows a luminous, medium-intensity ruby red color, almost transparent. On the nose, it presents rustic, earthy, and humid aromas, with hints of tobacco and underbrush. The palate is full-bodied and broad, marked by a savory core and a slightly bitter, almond-like finish. Its natural balance, textural complexity, and umami-like salinity make it a unique and contemplative wine.

CULINARY USE
Ideal with rustic or earthy dishes: aged pecorino, wild mushrooms, game birds, charcuterie, or legume-based stews. Its structure and saline backbone also make it suitable for unconventional pairings, such as roasted root vegetables or Middle Eastern spiced dishes.

Tenuta Mara is a biodynamic wine estate founded by Giordano Emendatori and now led by his daughter, Elena Emendatori. Since its first vintage in 2011, the estate has become a benchmark for natural winemaking in Romagna. Under the guidance of vineyard and cellar manager Leonardo Pironi, Tenuta Mara practices holistic, artisanal agriculture with a deep respect for nature and cosmic rhythms. The entire estate is a biodynamic ecosystem—and an open-air art museum—where every vineyard bears the name of a family member, and every bottle tells a story of place and purpose.

TERRITORY
Located in San Clemente, between the Apennines and the Adriatic Sea, Tenuta Mara stretches across the gentle slopes of the Conca Valley. Its 11 hectares of vineyards are planted primarily with Sangiovese in various massal and clonal selections. The soils are clay-limestone with a marine-sedimentary origin, highly fertile thanks to biodynamic preparations and green manuring practices. Exposure ranges from northeast to southwest at altitudes between 160 and 180 meters, benefiting from optimal sunlight, ventilation, and biodiversity.

Sustainability Image Tenuta Mara is a fully certified biodynamic estate with a steadfast commitment to environmental stewardship. All vineyard work is performed manually, in accordance with lunar and planetary calendars. Green manuring with up to 30 varieties of legumes, grasses, and cruciferous plants enhances soil fertility and biodiversity. No chemical fertilizers, pesticides, or herbicides are used. The winery relies on gravity-fed systems and eschews temperature control and filtration. Amphora fermentation and aging minimize environmental impact and promote the authenticity of the wine. Art, music, and nature are integrated into the estate’s identity, creating a holistic and sustainable model for the future of fine winemaking.
