A biodynamic Sangiovese of rare finesse and energy, Guiry is a pure, elegant red aged in French oak and concrete, revealing floral, spicy, and mentholated complexity.

Density 5,500 plants per hectare
Vinification Carefully selected by hand and sorted optically, the grapes drop into conical shaped oak casks without controlled temperature and no additional yeast. The must concludes fermentation and remains macerating on the skins for approximately one month. 
Maturation On its lees for 12 months in concrete eggs and then mature in bottle for 6 months
Notes An intense medium clear red. The ample bouquet veers towards notes of rose hip. Ripe cherries, summer melon, strawberry preserve and a hint of rosemary ad orange zest.
Pairing Pasta with clam and chickpeas, Adriatic fishes, tuna.

Guiry is born in the gently rolling hills of San Clemente, in the Conca Valley, at the southern edge of Romagna. This area, just a few kilometers from the Adriatic Sea, is marked by medium-textured, clay-limestone soils rich in potassium and magnesium—ideal for the expression of Sangiovese in a biodynamic context. The vineyards benefit from constant breezes and a vibrant Mediterranean biodiversity.

TECHNIQUE AND ARTISANAL CRAFTSMANSHIP
Made from 100% Sangiovese, the grapes are hand-harvested in the second half of September into small 12kg crates. After rigorous hand selection, the berries fall by gravity into truncated conical oak vats. Fermentation is entirely spontaneous, without temperature control or added yeasts, followed by a maceration of about one month on the skins. The wine then matures for 12 months on its fine lees in a combination of small French oak barrels and concrete vats, followed by an additional 6 months of bottle aging. The result is a wine that balances structure, aromatic purity, and softness.

ORGANOLEPTIC AND NUTRITIONAL CHARACTERISTICS
Guiry shows a medium-intensity ruby red color, very clear and tending toward transparency. On the nose, it offers a refined bouquet of broom and rose, followed by raspberry, blackberry, and sour cherry, with intriguing closing notes of star anise and ginger. The palate is silky and enveloping, with moderate freshness and delicate tannins. A final mentholated note contributes to the wine’s long and balanced finish, making it both graceful and persistent.

CULINARY USE
Serve at 15–16°C. Guiry is a versatile red wine ideal for delicate meat dishes, roasted poultry, aromatic vegetable preparations, and even aged cheeses. Its gentle structure and refined profile allow for both everyday enjoyment and more refined pairings.

Tenuta Mara is a biodynamic wine estate founded by Giordano Emendatori and now led by his daughter, Elena Emendatori. Since its first vintage in 2011, the estate has become a benchmark for natural winemaking in Romagna. Under the guidance of vineyard and cellar manager Leonardo Pironi, Tenuta Mara practices holistic, artisanal agriculture with a deep respect for nature and cosmic rhythms. The entire estate is a biodynamic ecosystem—and an open-air art museum—where every vineyard bears the name of a family member, and every bottle tells a story of place and purpose.

TERRITORY
Located in San Clemente, between the Apennines and the Adriatic Sea, Tenuta Mara stretches across the gentle slopes of the Conca Valley. Its 11 hectares of vineyards are planted primarily with Sangiovese in various massal and clonal selections. The soils are clay-limestone with a marine-sedimentary origin, highly fertile thanks to biodynamic preparations and green manuring practices. Exposure ranges from northeast to southwest at altitudes between 160 and 180 meters, benefiting from optimal sunlight, ventilation, and biodiversity.

Sustainability Image Tenuta Mara is a fully certified biodynamic estate with a steadfast commitment to environmental stewardship. All vineyard work is performed manually, in accordance with lunar and planetary calendars. Green manuring with up to 30 varieties of legumes, grasses, and cruciferous plants enhances soil fertility and biodiversity. No chemical fertilizers, pesticides, or herbicides are used. The winery relies on gravity-fed systems and eschews temperature control and filtration. Amphora fermentation and aging minimize environmental impact and promote the authenticity of the wine. Art, music, and nature are integrated into the estate’s identity, creating a holistic and sustainable model for the future of fine winemaking.
