GEOGRAPHIC AND CULTURAL ORIGINCascina Palazzo Hazelnut Grain is made exclusively from Alta Langa PGI hazelnuts, grown in Feisoglio, in the hills of Piedmont.
The Alta Langa is a territory renowned worldwide for the exceptional quality of its hazelnuts. The unique combination of climate, soil and centuries-old agricultural tradition gives the Tonda Gentile Trilobata its distinctive aromatic profile, delicate sweetness and remarkable versatility in confectionery.
Recognized by pastry professionals and chocolatiers as one of the finest hazelnut varieties in the world, Alta Langa hazelnuts are the essential ingredient behind some of Italy’s most celebrated sweet creations.
TECHNIQUE AND ARTISANAL CRAFTSMANSHIP
Cascina Palazzo Hazelnut Grain is produced from carefully selected whole hazelnuts grown and processed directly on the farm.
After harvesting, the hazelnuts are naturally dried in the air and sunlight of the Alta Langa before being carefully selected and toasted using a warm-air system.
This gentle roasting process enhances the natural aroma and flavor of the hazelnut while preserving its organoleptic and nutritional qualities.
The toasted hazelnuts are then finely chopped into grains, creating a versatile ingredient that retains the intense taste and fragrance of freshly roasted Alta Langa hazelnuts.
ORGANOLEPTIC AND NUTRITIONAL CHARACTERISTICS
Alta Langa PGI Hazelnut Grain offers an intense aromatic profile with elegant notes of toasted hazelnut, natural sweetness and a pleasant crunchy texture.
Each grain preserves the characteristic flavor of the Tonda Gentile Trilobata, enhancing recipes with depth, fragrance and a distinctive nutty character.
The careful roasting process highlights the natural richness of the hazelnut while maintaining its nutritional properties, making it a premium ingredient for professional and gourmet applications.
CULINARY USE
Perfect for flavoring and decorating desserts, cakes and gelato, Cascina Palazzo Hazelnut Grain is a versatile ingredient for pastry professionals and gourmet enthusiasts.
It can be used as a topping for ice cream, semifreddi, creams and baked goods, or incorporated into doughs and fillings to add texture and an intense hazelnut aroma.
Ideal for enhancing chocolate creations, pralines, cookies and traditional Italian desserts, it brings the authentic taste of Alta Langa hazelnuts to every preparation.
A simple ingredient that adds a refined touch to both classic and contemporary pastry creations.
PRODUCERSCascina Palazzo is a family-run hazelnut farm located in Feisoglio, in the heart of the Alta Langa.
The history of the company began in 1915, when Luigi Quazzo purchased the historic Cascina Palazzo and transformed it into a working farm, planting the first hazelnut trees on the sunniest slopes of the land.
Over four generations, the Quazzo family has dedicated itself to cultivating, harvesting and processing Alta Langa hazelnuts, gradually expanding the hazelnut groves and preserving a deep connection with the territory.
Today, Manuel Quazzo continues this family tradition together with his father Angelo, his mother Rosalia, his wife Elisa and the next generation, combining agricultural knowledge with direct processing of their own hazelnuts.
From tree to package, every step takes place on their land: cultivation, harvesting, drying, roasting and transformation into toasted hazelnuts, grain, flour, creams and pastes.
TERRITORY
Feisoglio is a small village of the Alta Langa, surrounded by hills, woods and pastures, where traditional agriculture remains deeply connected to the landscape.
Unlike the vineyard areas of the Langhe known worldwide for Barolo, Barbaresco and Moscato, the Alta Langa is a more rugged and natural territory, characterized by hazelnut groves and ancient rural traditions.
Here, the combination of climate, soil and agricultural heritage creates the ideal conditions for the Tonda Gentile Trilobata, the hazelnut variety recognized as one of the finest in the world.
For generations, Alta Langa hazelnuts have been at the heart of Piedmontese confectionery culture, becoming a preferred ingredient for renowned pastry chefs, chocolatiers and artisan gelato makers worldwide.
Cascina Palazzo’s production model is based on a close relationship between agriculture, territory and respect for natural processes. The hazelnuts are cultivated, harvested and processed entirely within the farm, creating a short supply chain that allows full control over quality and production methods.
The company follows the natural cycle of the hazelnut trees, using careful agricultural practices and gentle processing techniques designed to preserve the quality of the raw material.
From natural drying in the Alta Langa air to warm-air roasting and transformation into hazelnut grain, every stage is designed to protect the authentic aroma, nutritional properties and distinctive character of the fruit.
By maintaining a direct connection between the land and the final product, Cascina Palazzo preserves a centuries-old agricultural heritage while sharing the unique identity of Alta Langa hazelnuts with the world.
