TECHNIQUE AND ARTISANAL CRAFTSMANSHIP
Cascina Palazzo’s Hazelnut Paste is made using only one ingredient: 100% Alta Langa PGI hazelnuts.
The entire process takes place within the farm, from cultivation and harvesting to processing. After harvesting, the hazelnuts are naturally dried in the sun of the Langhe and then stored in ventilated boxes to continue their slow maturation while preserving their aroma and quality.
The hazelnuts are carefully selected, sorted and shelled before being gently toasted using a hot-air system. This delicate method respects the natural aromas, nutritional properties and organoleptic characteristics of the fruit.
After roasting, the hazelnuts are finely ground to obtain a smooth and naturally creamy paste. No oils, additives or additional ingredients are added: the characteristic creaminess comes exclusively from the natural oils contained in the hazelnut itself.

PRODUCERSCascina Palazzo is a family-run hazelnut farm located in Feisoglio, in the heart of the Alta Langa.
The history of the company began in 1915, when Luigi Quazzo purchased the historic Cascina Palazzo and transformed it into a working farm, planting the first hazelnut trees on the sunniest slopes of the land.
Over four generations, the Quazzo family has dedicated itself to cultivating, harvesting and processing Alta Langa hazelnuts, gradually expanding the hazelnut groves and preserving a deep connection with the territory.
Today, Manuel Quazzo continues this family tradition together with his father Angelo, his mother Rosalia, his wife Elisa and the next generation, combining agricultural knowledge with direct processing of their own hazelnuts.
From tree to jar, every step takes place on their land: cultivation, harvesting, drying, roasting and transformation into toasted hazelnuts, grain, flour, creams and pastes.
TERRITORY
Feisoglio is a small village of the Alta Langa, surrounded by hills, woods and pastures, where traditional agriculture remains deeply connected to the landscape.
Unlike the vineyard areas of the Langhe known worldwide for Barolo, Barbaresco and Moscato, the Alta Langa is a more rugged and natural territory, characterized by hazelnut groves and ancient rural traditions.
