A biodynamic rosé made from 100% Sangiovese, Maramato combines elegance, structure, and aromatic depth through slow fermentation and extended aging in oak.

Vinification The selection is completely manual on long sorting tables with each grape controlled with an optical scanner. The grapes are left to macerate for some hours before gently pressed and separated from their skins. The process of fermentation happens gradually in oak barrels for about 90 days.
Maturation Fine lees for 12 months in French oak barrels and then mature in the bottle for another 12 months
Color, Perfume and Taste Brilliant copper color. Aroma of orange peel, candied sugar, vanilla and slightly of menthol. Sapid velvety mouth, well balanced acidity, very long finale.
Pairing Carbonara pasta, fish, taleggio cheese with nuts. Also pairs well with white truffle.

Maramato is produced in San Clemente, at the southern edge of Romagna, in the gently rolling hills of the Conca Valley. This coastal micro-region benefits from Mediterranean breezes and marine-sedimentary soils, ideal for biodynamic viticulture. The vineyard soils are medium-textured, predominantly clay-limestone, rich in potassium and magnesium, and carefully cultivated to enhance organic fertility and biodiversity.

TECHNIQUE AND ARTISANAL CRAFTSMANSHIP
Crafted from 100% Sangiovese, the grapes are hand-harvested in 12kg crates during the second half of September. After meticulous hand selection and optical sorting of each berry, the grapes undergo brief skin contact to extract a delicate copper-pink hue. Gentle pressing follows, and fermentation proceeds slowly over approximately 45 days in French oak tonneaux, using only indigenous yeasts. The wine then rests on fine lees in the same barrels for 12 months, followed by a further 12 months of bottle aging. The approach is minimal intervention, aiming to highlight varietal purity and elegance.

ORGANOLEPTIC AND NUTRITIONAL CHARACTERISTICS
Maramato presents a brilliant copper-pink (“ramato”) color. The nose is intensely aromatic, with notes of orange peel, candied sugar, vanilla, and a subtle minty freshness. On the palate, it is sapid and velvety, with a well-balanced acidity and a very long, refined finish. Its tactile complexity and depth make it a unique expression of Sangiovese in rosé form.

CULINARY USE
Serve chilled but not too cold, around 10–12°C. Maramato pairs wonderfully with seafood carbonara, sea bass in spiced bread crust, Taleggio cheese with walnuts, and even richer dishes like tagliatelle with white truffle and butter. A gastronomic rosé with wide culinary versatility.

Tenuta Mara is a biodynamic wine estate founded by Giordano Emendatori and now led by his daughter, Elena Emendatori. Since its first vintage in 2011, the estate has become a benchmark for natural winemaking in Romagna. Under the guidance of vineyard and cellar manager Leonardo Pironi, Tenuta Mara practices holistic, artisanal agriculture with a deep respect for nature and cosmic rhythms. The entire estate is a biodynamic ecosystem—and an open-air art museum—where every vineyard bears the name of a family member, and every bottle tells a story of place and purpose.

TERRITORY
Located in San Clemente, between the Apennines and the Adriatic Sea, Tenuta Mara stretches across the gentle slopes of the Conca Valley. Its 11 hectares of vineyards are planted primarily with Sangiovese in various massal and clonal selections. The soils are clay-limestone with a marine-sedimentary origin, highly fertile thanks to biodynamic preparations and green manuring practices. Exposure ranges from northeast to southwest at altitudes between 160 and 180 meters, benefiting from optimal sunlight, ventilation, and biodiversity.

Sustainability Image Tenuta Mara is a fully certified biodynamic estate with a steadfast commitment to environmental stewardship. All vineyard work is performed manually, in accordance with lunar and planetary calendars. Green manuring with up to 30 varieties of legumes, grasses, and cruciferous plants enhances soil fertility and biodiversity. No chemical fertilizers, pesticides, or herbicides are used. The winery relies on gravity-fed systems and eschews temperature control and filtration. Amphora fermentation and aging minimize environmental impact and promote the authenticity of the wine. Art, music, and nature are integrated into the estate’s identity, creating a holistic and sustainable model for the future of fine winemaking.
