The Moraiolo is a noble olive variety native to Central Italy, particularly Umbria, Tuscany, and Marche. It thrives on the rugged, rocky hillsides and is known for its cold resistance and longevity, often living over 100 years. The olives are harvested between October and November, mostly by hand or with mechanical aids, to preserve their unique characteristics.
The variety is deeply rooted in Umbrian tradition, and its oil is one of the finest expressions of the region’s rich agricultural heritage.

TECHNIQUE AND ARTISANAL CRAFTSMANSHIP

This monovarietal extra virgin olive oil is cold extracted exclusively from Moraiolo olives. The production process is meticulous and immediate: olives are crushed right after harvesting to retain the oil’s full aromatic complexity and nutritional integrity.
Moraiolo trees yield less oil than other cultivars, but the quality is exceptional — a true reflection of artisanal craftsmanship and terroir.
