GEOGRAPHIC AND CULTURAL ORIGINPistacchio Verde di Bronte D.O.P. grows on the volcanic slopes of Mount Etna, around the town of Bronte in Sicily. The area's ancient lava soils, Mediterranean climate, and unique landscape give the pistachios their distinctive emerald-green color, intense aroma, and characteristic flavor. Known as the “green gold” of Bronte, these pistachios are harvested by hand only every two years and are protected by the European Union with Protected Designation of Origin status.
TECHNIQUE AND ARTISANAL CRAFTSMANSHIP
Made from 100% Pistacchio Verde di Bronte D.O.P., this product is obtained by shelling pistachios from the latest harvest. The nuts are carefully selected and roasted to enhance their natural aromatic and flavor characteristics while preserving their distinctive appearance. The protective coating retains its characteristic violet tones, creating the typical visual identity of the shelled Bronte pistachio.
ORGANOLEPTIC AND NUTRITIONAL CHARACTERISTICS
The pistachios have a distinctive green color beneath their violet protective coating and offer an intense, aromatic flavor enhanced by roasting. Their characteristic taste and firm texture make them a versatile ingredient, while their natural composition allows them to retain their quality and flavor over time when properly stored.
CULINARY USE
Roasted shelled pistachios are suitable for both sweet and savory preparations. They can be enjoyed on their own or used as an ingredient in pastry, confectionery, gelato, salads, appetizers, pasta dishes, and meat or fish preparations. Their intense flavor and crunchy texture also make them ideal for finishing and garnishing dishes.
PRODUCERFounded in 1949 by Antonino Caudullo, the company is now led by his sons Nunzio and Alberto, who continue a family tradition dedicated to the processing and marketing of nuts, with a particular focus on pistachios from Bronte. Caudullo combines direct management of its own agricultural land with long-standing relationships with local producers, allowing careful selection of raw materials. Its production facilities in Bronte include systems for shelling, peeling, optical sorting, processing, and packaging, serving both the Italian and international markets.
TERRITORY
Bronte lies on the western slopes of Mount Etna and is the main Italian area for the cultivation of Pistacchio Verde di Bronte D.O.P. The pistachio trees grow among ancient lava flows and rugged volcanic terrain, where the soil, climate, and biodiversity create unique growing conditions. Pistachios are harvested manually, generally from late August to September, and production takes place every other year. The close relationship between the plant, the volcanic landscape, and traditional cultivation practices is at the heart of the product's identity.
The cultivation and harvesting of Pistacchio Verde di Bronte D.O.P. remain closely connected to the natural characteristics of the volcanic landscape. Harvesting is largely carried out by hand, particularly on the steep and irregular lava-covered terrain where mechanical harvesting is difficult. The biennial production cycle also requires careful manual management of the trees, including pruning and bud removal in the non-harvest years.Caudullo combines this traditional approach with modern processing technologies and rigorous selection procedures.
