    This Amarena Variegato is made with Amarene di Cantiano, also known locally as visciole — small, dark red Morello cherries traditionally associated with the municipality of Cantiano in the Marche region of Italy.

    MorelloAustera has been producing Amarena di Cantiano in the Cantianese territory since 2005, with the aim of preserving and bringing the character of this local fruit to gelaterias, pastry makers and food professionals.

    The Amarena di Cantiano has a long-standing place in the area's agricultural and gastronomic heritage. Its distinctive character and limited local production have made it a niche specialty, deeply connected to the landscape and traditions of Cantiano.

    The Amarena di Cantiano is included in the Slow Food Ark of Taste, an international catalogue dedicated to unique traditional products that belong to the cultural, historical and gastronomic heritage of communities around the world.

    The Visciola di Cantiano is also officially listed among the Traditional Agri-food Products (Prodotti Agroalimentari Tradizionali – PAT) of the Marche Region, as published in the Official Gazette.

    TECHNIQUE AND ARTISANAL CRAFTSMANSHIP

    The preparation follows a traditional and carefully controlled process.

    The cherries are first pitted and left to drain overnight. Their natural juice is then combined with sugar and reduced to create a particularly dense syrup. Once cooled, the whole pitted cherries are added together with a carefully balanced blend of spices, then gently brought to a simmer.

    The preparation is packed while still hot and undergoes a short pasteurization process. The tins are then stored in a cool environment for approximately two months, allowing the cherries and syrup to slowly macerate and develop their characteristic depth of flavor.

    The result is a rich, handcrafted variegato with whole cherries and a dense syrup specifically suited to professional gelato applications.

    ORGANOLEPTIC AND CHARACTERISTICS

    The Amarena Variegato offers a distinctive balance between the natural acidity of Morello cherries and the sweetness of the syrup.

    The fruit has an intense dark red color and a rich, concentrated cherry flavor reminiscent of baked fruit, complemented by subtle notes of cinnamon, clove and lemon.

    Cantiano is traditionally associated with several local symbols, including bread, the Amarena and the Cavallo del Catria. The Amarena di Cantiano represents one of the area's most distinctive agricultural products and remains closely connected to local cultivation and traditional processing.

    The MorelloAustera orchards cover approximately 11 hectares of Cantianese land, contributing to the preservation of a fruit whose cultivation and transformation have long formed part of the local heritage.

    Historical records also attest to the reputation of Amarene di Cantiano beyond the region. In the early 20th century, the fruit received recognition at international exhibitions, including a Gold Medal at the International Exhibition in Paris and a Cross of Merit at the International Exhibition in Milan. Documentation also records an order placed by King Vittorio Emanuele II in 1928.

    Today, production remains limited and closely connected to the local territory, making Amarena di Cantiano a distinctive niche ingredient for Italian gelato and pastry making.
